Ingredients

2 cups all-purpose flour

1/2 cup sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup cold butter

1 egg- large

1/2 cup heavy cream or half and half

2 tbsp lemon juice

1 tsp vanilla

1/2 tbsp lemon zest

Swedish pearl sugar


Glaze

1 cup powdered sugar

1 tbsp lemon zest

3-5 tbsp lemon juice



 

Directions


  • Preheat oven to 425F. Line baking sheet with parchment paper

  • Mix dry ingredients in large bowl. Add cold butter using fork of pastry cutter until mixture is like fine crumbs.

  • Mix cream, egg, lemon juice, lemon zest, and vanilla.

  • Pour into dry mix. Do not over mix.

  • Place dough on lightly floured surface. Knead 4 or 5 times.

  • Pat dough into 8 inch or 9 inch circle roughly 1 inch thick. Cut into 8 triangle shaped pieces. Place on baking sheet. Sprinkle with sugar.

  • Bake for 12-15 minutes- until golden brown. Cool. Glaze
